They are made of molybdenum/vanadium stainless steel and razor sharp (and I mean sharp!). On top of that, the knives are both ice-tempered and resistant to rust or staining. One of the advantages of the all in one piece construction is that there is no place for bacteria to hide in the handle or the space between the blade and handle as there is in the traditional construction.
