Knife blocks are a very popular way to store kitchen knives. If you buy a knife set, storage blocks are often included. You can also buy stand alone knife blocks in various sizes. Knife blocks provide safety and convenience, but they take up counter space and can be difficult to clean when necessary. It is important to make sure your knives are clean and dry before you store them in a block. Moisture, dirt and food particles can get stuck in the slots and cleaning the slots is not usually easy though a can of compressed air can help.
Knives used for softer foods do not necessarily need a full width and length tang. High carbon stainless steel is the top choice material for use in making cutlery knife blades. This top grade material keeps its color and is not damaged by acid foods like onions, lemons or tomatoes. Although it is much harder to craft a good cutting edge initially, it lasts much longer on a high carbon stainless steel blade. Materials that have less carbon content, like carbon steel and stainless steel, are also used for good kitchen knives. However, those knives do not last as well as those of high carbon stainless steel.
We went back to the knife shop and started our collection of Global knives. They are made of molybdenum/vanadium stainless steel and razor sharp (and I mean sharp!). On top of that, the knives are both ice-tempered and resistant to rust or staining. That silly (at first glance) dimpled handle is much more slip resistant than our more traditional knives. One of the advantages of the all in one piece construction is that there is no place for bacteria to hide in the handle or the space between the blade and handle as there is in the traditional construction. Now add a limited lifetime warranty and you have a set of knives which will last for many generations. You will want to hand wash these knives just as you do any other good cutlery. Again, be careful, they are very sharp. They maintain that edge through a lot of use and don't require frequent sharpening.
