A magnetic strip mounted to a kitchen wall is another knife storage option and the one I personally use. Magnetic strips are simple to clean, can easily accommodate large kitchen knife sets, and this method of storage is extremely efficient in that it saves both counter top and drawer space. I would not recommend it, however, if you have young children or rambunctious pets.
Knives used for softer foods do not necessarily need a full width and length tang. High carbon stainless steel is the top choice material for use in making cutlery knife blades. This top grade material keeps its color and is not damaged by acid foods like onions, lemons or tomatoes. Although it is much harder to craft a good cutting edge initially, it lasts much longer on a high carbon stainless steel blade. Materials that have less carbon content, like carbon steel and stainless steel, are also used for good kitchen knives. However, those knives do not last as well as those of high carbon stainless steel.
Also, some kitchen knives are more ergonomic than others so it is best to find one that is comfortable to hold. You may get the whole set (which include the paring knife, Santoku knife, cleavers, boning, and fillet knife among others) or just get the kinds that you use on a regular basis if you want to save.
