A kitchen knife blade has four primary parts. The cutting edge or side that cuts is the most important. It is the business or working section of the knife. It needs to be sharp and its surfaces must be smooth. Many times the blade forms a point or tip at the end. For example, a chef knife usually has such a tip.The side opposite to the cutting side is smooth. This is the spine. of the knife. The heel of the blade is the opposite end from the tip and evolves into the tang. The blade continuation that is between the two parts of the knife handle starts st the heel and is called the tang. To put it another way, the tang is the extension of the knife blade that goes between the handle pieces. When choosing a heavy duty work knife, it is best to select one with a tang that is as wide as the knife blade and extends to the end of the handle.
A good knife handle must be light, strong and be comfortable for the user to hold. These features provide a safe and efficient knife handle. The handle has two vertical pieces that cover the extension of the blade of the knife. (the part of the knife between the handle pieces is also called the tang....see below) Each of the two handle pieces has the same horizontal diameter. They cover the extension from the knife blade, which extends partially or completely the length of the handle. A quality kitchen knife tang runs the entire width and length of the handle and can be seen between the handle parts. Rivets hold the blade extension and the handle parts together.
Buy the right mid-range priced kitchen cutlery set and you may not ever have to buy another one. There are a number of mid-range sets that are built to last, and they will last many years if you take care of them correctly. This means cleaning them immediately after use and returning them to their block. Knives that are left dirty are prone to rust and corrosion, and they will not last long in thrown in a drawer with other knives.
