Kitchen knives are one of those things in life that you have to spend a little money on to get something good. I'm not saying you need to go out and spend thousands of dollars on the best set there is, but you do get what you pay for. Most sub-$100 dollar sets have poor quality blades and are not built to last. It isn't until you get into the $150 to $200 dollar range that you start to see a lot of good sets of knives.
We did buy this knife just to see if what the man had said was true. He did not exaggerate. We were hooked. Being lightweight is one thing but the balance of this knife was superb. The design is sleek and modern in appearance but filled with the Japanese tradition of making some of the world's best cutting steel.
Ceramic knives are extremely hard wearing and are second only to diamonds in terms of hardness. Ceramic knives are astonishingly sharp and will not require home sharpening.
