Using knives is an essential part of daily food preparation. But few cooks know the different parts of a knife and how they contribute to longevity of a knife. A kitchen knife has two essential parts. Understanding how the construction and component materials make a difference in durability of the knife is very important when choosing knives for the kitchen.
A good knife handle must be light, strong and be comfortable for the user to hold. These features provide a safe and efficient knife handle. The handle has two vertical pieces that cover the extension of the blade of the knife. (the part of the knife between the handle pieces is also called the tang....see below) Each of the two handle pieces has the same horizontal diameter. They cover the extension from the knife blade, which extends partially or completely the length of the handle. A quality kitchen knife tang runs the entire width and length of the handle and can be seen between the handle parts. Rivets hold the blade extension and the handle parts together.
Of all of the types of steel being used for kitchen knives none is more common than Stainless Steel. A word of caution not all stainless are created equal. A better understanding of them is important when considering buying kitchen knives.
