Anolon knives are crafted of ice-hardened German steel. This high-carbon steel is extremely tough and holds its edge well. They will need to be sharpened occasionally, but not as often as some similar knife sets, which need to be sharpened after every use. Anolon knives can be used multiple times before they need to be sharpened, and they sharpen easily. The blades are stain resistant and aren't prone to rust, but as with all knives, you have to make sure they stay clean and dry. They can be washed in the dishwasher, but it's recommended that you hand-wash and dry them so they will last longer.
